Sweet & Sour Chicken

Ingredients

  • Sweet and Sour Sauce:

    • Brown sugar
    • Apple cider vinegar
    • Ketchup
    • Low-sodium soy sauce
    • Sesame oil
    • Garlic, minced
    • Corn-starch
    • Water
  • Chicken:

    • Chicken breasts, diced
    • Olive oil
    • Corn-starch
    • Green onions, chopped (for garnish)
    • Sesame seeds (for garnish)

Instructions

  1. Make the Sweet and Sour Sauce:
  • Combine apple cider vinegar, ketchup, soy sauce, sesame oil, brown sugar, and minced garlic in a saucepan.
  • Heat the mixture over medium heat, bringing it to a boil.
  • In a separate bowl, mix water and corn-starch until smooth, then stir it into the boiling sauce.
  • Let the sauce bubble for a few minutes until it thickens, then set aside.
  1. Prepare the Chicken:
  • Place the diced chicken in a resealable bag or bowl, add corn-starch, and toss until all pieces are evenly coated.
  • Heat a skillet over medium-high heat and add a few tablespoons of olive oil.
  • Fry the chicken in batches until golden and cooked through (no need to deep fry).
  1. Combine and Serve:
  • Once the chicken is fully cooked, pour the prepared sweet and sour sauce into the skillet.
  • Stir to coat the chicken pieces in the sauce and continue cooking for a few minutes until heated through.
  • Garnish with chopped green onions and sesame seeds before serving.
